Does anyone know where I can find full instructions on the manual operation of the thermostat? I’d like to use in without all the app features for awhile.

There’s more control than that.
without turning the knob, push in. This will open the menu on the thermostat. You can then select stuff like modes, settings, etc. You should find a majority of the primary functions there.
I only have reset?
I just found this video that spends a good deal of time on manual operation. I looks pretty good but haw hard would it be for WYZE to produce a doc on the details. Or links to this and perhaps other videos as a minimum?
