I would like to be able to change the sound on the Sense Hub when door is opened. Like 'door open" voice or a different chime.

There currently is no option to be able to this today, but there is a Wishlist Item for this type of request. Voice Alerts and Chimes for Sense
Also keep in mind if you have Alexa devices you can create Routines in the Alexa app that can announce Doors Open or of the like in Alexa.
Here is one I use.
