Do I need a cam plus subscription for all 3 of my cameras or just one for my account?
Cam Plus subscriptions are per camera. You’ll need 3 Cam Plus subscriptions.

Just in case you meant the confusingly named CamPlus Lite (name your price, person detection only), that service is per account and includes all cameras.
